This Brazilian coffee is far from ordinary! Through a combination of a unique growing region and anaerobic processing, it boasts a vibrant and intricate profile, with flavours of black plum and lavender layered over a velvety chocolate body.
The Catuai 81 varietal is widely cultivated in this specific region of Brazil, thanks to its exceptional cleanliness and sweetness. At the Um Family's Espírito Santo farm, this coffee is a primary lot. It undergoes a traditional pulped natural processing method, with a 72-hour anaerobic mucilage fermentation prior to drying. During this process, the cherry's skin is removed, leaving the seed to dry while still encased in its mucilage layer.
